Roasted Eggplant

I just love the creaminess of egg plant with a slow roast in the oven. Somehow it feels buttery and velvety that no other veg can deliver . This was absolutely delicious and pretty simple. You just cut your eggplant in half and mix up a marinade and push it into those cuts so it goes all the way through.
