Topping
Mix together:
⅓ cup oats
2 tbsp flour
2 tbsp coconut sugar
2 tbsp peanut butter
1 tsp cinnamon
Muffin Batter
Add to a blender and blend until smooth:
1 can chickpeas
⅔ cup coconut sugar
2 tsp vanilla
1 tbsp milk
1 tbsp cider vinegar
Then stir in:
2 apples, diced small
1½ cups flour
1½ tsp baking powder
½ tsp baking soda
2 tsp cinnamon
To Bake
Preheat oven to 180°C (350°F).
Line or grease a 12-hole muffin tin.
Divide batter evenly among the muffin cups.
Sprinkle the topping mixture over each muffin.
Bake for 20 minutes, or until a skewer inserted into the centre comes out clean.
Allow to cool before serving.
Makes: Approximately 12 muffins.
