Comforting Vegan Shepherdess Pie

2 Tins Drained Brown Lentils

1 Onion Chopped

3 Cloves Garlic 

1 Carrot Thinly Sliced

1 Red Pepper

1 C Froz Peas

1 Tbsp Tomato Paste

3 Bay Leaves

1 Tsp Dark Soy Sauce 

1 C Liquid Veg Stock 

2 Tsp Corn Flour mixed in a little water to a slurry to thicken. 

Mash 

3 Large Floury Potato’s 

1/2 C Humus 

1/4 Plant Based Milk

Salt n Pepper to taste

In a large frypan brown off your onions. Add garlic and your veg. Add the tomato paste into the middle of your pan and get some colour on your pan.  Add the rest of the ingredients except the cornflour slurry. Cook for 10mins . 

Taste - adjust. Add the cornflour and cook for another 5 mins. 

Top with your mashed potato’s and pop in the oven to brown up for 15- 20mins .
