Now today’s recipe is for my Gf peeps. It’s Gf ,DF , Egg Free and No refined sugar. But I promise you it’s delicious. You could add some extra dates if you want some texture to it but I blended them.
Cake
1 C Dates
1 C Brewed Rooibos Tea
1/3 C Aqua Faba ( chickpea liquid)
1 tsp Vanilla
1 Tbsp Tahini
1/2 C Coconut Sugar
Pinch Salt
2 C Quinoa Flour
1 Tbsp Ground Flaxseed
1 Tsp Cinnamon
2 Tsp Baking Powder
1/2 C Plant Based Milk
Blend your dates with the rooibos tea. Put into your mixing bowl.
Add in aqua faba, vanilla, tahini, coconut sugar, flax seed and stir. Then add in your quinoa flour and baking powder, cinnamon and pinch of salt.
Now add in your plant based milk. Add a little more if needed- you want a thick cake like batter. Pour into a lined cake tin.
Bake @175deg for 35mins.
(Toffee Sauce )
In a pot -
2 Tbsp Date Syrup
2 Tbsp Coconut Sugar
1 Tbsp Tahini
1 Tsp Vanilla
1/2 C Coconut Cream
Stir well and cook over a low heat until sauce is smooth and coconut sugar is melted. Around 3-5 mins.
Drizzle over the cake. And enjoy 💚
