Granola crunch

The secret here is to make sure your banana is nice and ripe.  That makes your granola much sweeter.  If you add an extra banana you get bigger clumps and they almost become like little cookies.   It does lose a little of its “crispy” factor so make sure to make smaller batches and keep in an air tight container. 

I used my left over granola today to top my muffins and it turned out just great. 

In a bowl mash x2 large ripe bananas well. 

Now add in 3 Cups of any puffed grain you fancy.  ( Even all oats would work). 

Add about 2 C of any seeds of nuts you have.  

2 Tsp of Cinnamon 

If you need more sweet add a tablespoon of honey, date syrup or maple.  

Mix it well.  It should be clumpy.  If not add another mashed banana.  If you hate banana or don’t have any you could use puree apples or even puréed kumara.  

Pop in the oven at 160 deg and give it a toss every so often.
